  • 2 cloves garlic, minced
  • 1/2 inch cube ginger, minced
  • 1 shallot, thinly sliced
  • 1 pound ground pork
  • 1 carrot, grated
  • 1/2 tablespoon fish sauce
  • 2 tablespoon tamari
  • 2 green onions, chopped
  • 1/4 cup cilantro, roughly chopped
  • 10 cabbage leaves
  • 3 tablespoon tamari (for dipping sauce)
  • 1 tablespoon sugar-free maple syrup (for dipping sauce)
  • 1 tablespoon toasted sesame oil (for dipping sauce)
  • 1/2 lime, juiced (for dipping sauce)

Instructions

1. Heat the olive oil in a pan over medium heat. Add the garlic, ginger, and shallot, and cook until fragrant.

2. Add the ground pork and cook until browned.

3. Stir in the grated carrot, fish sauce, and tamari. Cook for a few minutes until well combined.

4. Remove the pan from heat and mix in the green onions and cilantro.

5. Blanch the cabbage leaves in a pot of boiling water for 1-2 minutes until softened, then drain and let cool.

6. Place the filling in each cabbage leaf and roll them up tightly.

7. In a small bowl, mix together all the dipping sauce ingredients.

8. Serve the Sesame Ginger Keto Cabbage Rolls with the dipping sauce on the side.

Notes

Choose large, pliable cabbage leaves for easier rolling.
