  • 2 tablespoon sesame oil
  • 1 pound ground pork
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 4 cup shredded cabbage
  • 2 medium carrots, julienned
  • 4 cup chicken broth
  • 3 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 4 green onions, sliced

Instructions

1. Heat 2 tablespoon of the sesame oil in a large soup pot or Dutch oven over medium heat.

2. Add the ground pork and cook, breaking it apart with a wooden spoon, until it’s browned and cooked through, about 5-7 minutes.

3. Stir in the minced ginger and garlic, and the diced onion. Sauté for 2-3 minutes, until the vegetables are fragrant and softened.

4. Add the shredded cabbage and carrots to the pot. Cook for an additional 2-3 minutes, stirring occasionally.

5. Pour in the chicken broth, soy sauce, and rice vinegar. Bring the soup to a simmer and let it cook for 10 minutes, or until the vegetables are tender.

6. Season the soup with salt and pepper to taste.

7. Drizzle the remaining 2 tablespoon of sesame oil over the soup and stir in the sliced green onions just before serving.
