A delicious and hearty breakfast casserole that combines Mexican flavors with the comfort of a casserole. Perfect for feeding a crowd or for meal prep during the week.
1. Preheat your oven to 375°F. Grease a baking dish.
2. Cook the chicken sausage in a skillet over medium heat until browned. Add oregano, smoked paprika, chili powder, garlic powder, cumin, salt, pepper, and cayenne. Stir until fragrant.
3. Spread ranchero sauce in the bottom of the greased baking dish. Layer tortillas over the sauce. Add black beans, canned tomatoes and green chilies, cooked sausage, and sprinkle cheese over the top. Repeat layers if desired.
4. Whisk the eggs in a separate bowl and pour evenly over the casserole.
Serve with avocado slices or a light salad. Pair with coffee or orange juice. Leftovers can be reheated in the microwave or oven.
