  • 1 can (15.25 ounce) black beans, drained and rinsed
  • 1 can (15.5 ounce) black-eyed peas, drained and rinsed
  • 1 cup diced ripe avocados (optional)
  • 2 tablespoon red wine vinegar
  • 1 large lime, juiced
  • 1 teaspoon chili powder
  • 1 teaspoon sugar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Dijon-style mustard
  • 1/4 teaspoon garlic powder
  • 1/3 cup olive oil
  • Salt and pepper to taste

Instructions

1. In a large bowl, combine sweet corn, quartered cherry tomatoes, diced bell peppers, red onion, jalapeño, chopped cilantro, black beans, black-eyed peas, and avocados if using. Gently mix to combine.

2. In a separate small bowl, whisk together red wine vinegar, lime juice, chili powder, sugar, ground cumin, paprika, Dijon mustard, garlic powder, and olive oil. Season with salt and pepper to taste.

3. Pour the dressing over the salad mixture and gently toss until well coated.
