Coconut Curry Braised Salmon: A Delightful Fusion of Flavors

  • 2 cloves garlic, grated
  • 1/2 small onion, finely chopped
  • 1 inch piece ginger, peeled and finely chopped
  • 1 tablespoon chopped jalapeño or serrano chili, optional
  • 3 tablespoon red curry paste
  • 1 tablespoon curry powder
  • 1 can (13.5 ounce) coconut milk
  • 3 tablespoon lime juice
  • 2 tablespoon fish sauce
  • 2 filets of salmon, 6 ounce each, skin removed

Instructions

1. 1. Heat the coconut oil in a skillet over medium heat.

2. 2. Add the garlic, onion, ginger, and chili (if using). Sauté for 2–3 minutes until fragrant.

3. 3. Stir in the red curry paste and curry powder. Cook for 1 minute, allowing the flavors to bloom.

4. 4. Pour in the coconut milk, lime juice, and fish sauce. Bring the mixture to a simmer.

5. 5. Gently add the salmon filets to the skillet. Cover and cook for 8–10 minutes, or until the salmon is cooked through and flakes easily with a fork.

6. 6. Serve the Coconut Curry Braised Salmon over a bed of cooked rice, garnished with fresh cilantro and lime wedges.
