  • 1 cup light brown sugar (packed well)
  • 3/4 teaspoon Morton Coarse Kosher Salt
  • 10 ounce Andes peppermint crunch pieces
  • 1/2 cup semisweet chocolate chips
  • 2 large eggs, room temperature
  • 2 teaspoon vanilla extract
  • 1 1/2 cup crushed Oreo cookies
  • 1 cup cold salted butter, cut into 1/2-inch pieces
  • 1 teaspoon baking soda
  • 1/2 cup white sugar
  • 3 cup all-purpose flour
  • 2 teaspoon cornstarch

Instructions

1. Preheat your oven to 350°F and line baking sheets with parchment paper.

2. Cream the cold butter with white sugar and brown sugar until creamy and well-combined.

3. Mix in the room-temperature eggs and vanilla extract until the mixture is smooth and homogeneous.

4. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt.

5. Gradually add the dry ingredients to the wet mixture, mixing until the dough is just combined.

6. Gently fold in the crushed Oreos, Andes peppermint crunch pieces, and chocolate chips.

7. Scoop the dough onto the prepared baking sheets, spacing the cookies about 2 inches apart.

8. Bake the cookies for 10–12 minutes, until the edges are lightly golden but the centers are still soft.

9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

If you can’t find Andes peppermint crunch pieces, you can use crushed candy canes or peppermint bark instead.

Keep a close eye on your cookies during the baking process, as oven temperatures can vary. The cookies should be lightly golden on the edges but still soft in the center.

Store the cooled cookies in an airtight container at room temperature for up to 1 week. For maximum freshness, you can also freeze the cookies for up to 3 months.

These cookies make a wonderful homemade gift for the holiday season. Simply package them in festive tins or boxes, and your loved ones will be delighted.
