Instructions

1. 1. Make the Filling: In a large bowl, combine the shredded chicken, cream cheese, sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix until well combined.

2. 2. Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you. Place 2 tablespoon of the filling in the center. Fold the bottom corner over the filling, fold in the sides, then roll tightly. Brush the top corner with beaten egg to seal.

3. 3. Heat the Oil: Heat vegetable oil in a deep skillet or pot to 350°F.

4. 4. Fry the Egg Rolls: Fry the egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown and crispy.
