  • 1 cup condensed milk
  • 1/3 cup coconut milk
  • 1 1/2 cup heavy whipping cream
  • 2 tablespoon granulated sugar
  • 1 teaspoon ube extract

Instructions

1. 1. Preheat your oven to 350°F and grease a 9×13-inch baking dish.

2. 2. In a bowl, whisk together the flour, baking powder, and salt.

3. 3. In a separate bowl, beat the egg yolks with 3/4 cup of sugar until pale and thick. Mix in the milk, ube extract, and ube halaya.

4. 4. Gradually fold the dry ingredients into the yolk mixture until just combined.

5. 5. In another bowl, beat the egg whites with 1/4 cup of sugar until stiff peaks form. Gently fold the whipped egg whites into the batter.
