  • 1/2 cup red onion, thinly sliced
  • 1 jar (12 ounce) marinated artichoke hearts, drained and rinsed
  • 1 can (15 ounce) chickpeas, drained and rinsed
  • 1/4 cup fresh basil, chopped
  • 1/4 cup chives, chopped
  • 2 tablespoon capers

Instructions

1. 1. In a large bowl, combine the halved cherry tomatoes, thinly sliced red onion, drained and rinsed artichoke hearts, chickpeas, fresh basil, chives, and capers.

2. 2. In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoon red wine vinegar, 1 tablespoon dried parsley, 1/2 teaspoon salt, 1 clove garlic minced, and 1/4 teaspoon black pepper until well combined.

3. 3. Pour the Tuscan vinaigrette over the salad ingredients and gently toss to ensure all the components are evenly coated. Chill the salad for a few minutes, then serve as a side or a light main dish.
