  • 16 ounce frozen peas
  • 1 pear, diced

  • 1 teaspoon lemon zest
  • 1/2 cup parsley, roughly chopped
  • Freshly ground black pepper, to taste

Instructions

1. 1. In a large sauté pan over medium heat, cook the pancetta until crisp, about 5–7 minutes. Remove with a slotted spoon and set aside, leaving the rendered fat in the pan.

2. 2. Add the shallots to the pan and cook until soft and translucent, about 3–4 minutes.
