Instructions

1. In a small saucepan, combine the water and brown sugar. Heat gently until the sugar dissolves. Remove from heat and gradually add the tapioca starch, stirring until a dough forms. Knead the dough until smooth and pliable.

10. Rinse the cooked pearls under cold water to stop the cooking process and remove any excess starch.

11. Transfer the pearls to a bowl and toss them with your choice of syrup, such as maple, agave, or brown sugar, to keep them sweet and soft.

Notes

The size and shape of the pearls can be adjusted to your preference, but maintaining a consistent size is important for even cooking.

Cooked boba pearls will stay fresh for 3-5 days when stored in an airtight container in the refrigerator.
