  • 1 1/2 cup water
  • 1/2 cup finely chopped veggies of your choice
  • 1/4 cup steamed mukimame (shelled edamame)
  • 1/4 cup diced avocado
  • 1 tablespoon sauce of your choice
  • 1/4 cup mayonnaise
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon coconut aminos or soy sauce
  • 1 teaspoon honey
  • 1/2 teaspoon sesame oil
  • Black sesame seeds, for garnish

Instructions

1. 1. Cook the sushi rice by combining the rinsed sushi rice and water in a rice cooker or pot, and cook according to the package instructions. Let it cool slightly.

2. 2. In a large bowl, mix the chopped veggies, edamame, avocado, and your choice of sauce. Gently fold in the cooked sushi rice until well combined.

3. 3. Lightly grease a mini muffin tin or line it with silicone cup. Press the rice mixture firmly into each cup to form the base of the Sushi Cup.

4. 4. Whisk together the spicy mayo ingredients in a small bowl. Drizzle over each Sushi Cup and sprinkle with black sesame seeds.

5. 5. Serve immediately or chill for 10-15 minutes to allow the rice to firm up.

Notes

For vegetarian or vegan versions, omit the edamame and replace it with additional chopped veggies. Experiment with different proteins and sauces to customize your Sushi cup.
