Spooky and Delicious: Stuffed Mushroom Eyeballs for Halloween

Ingredients

Scale
  • 16 large white or cremini mushrooms
  • 8 ounce cream cheese, softened
  • 1/2 cup cooked sausage (or crumbled bacon)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 16 small olives, pitted (for “pupils”)
  • Cooking spray or olive oil (for greasing)

Instructions

1. 1. Preheat your oven to 375°F. Clean the mushrooms and remove the stems. Lightly grease a baking sheet with cooking spray or olive oil.

2. 2. In a bowl, combine the softened cream cheese, cooked sausage (or bacon), Parmesan, garlic, parsley, salt, and pepper. Mix until the filling is smooth and well-incorporated.

3. 3. Spoon the filling into each mushroom cap, mounding it slightly.

4. 4. Place one olive in the center of each stuffed mushroom to create the “pupil” of the eye.

5. 5. Arrange the stuffed mushrooms on the prepared baking sheet and bake for 18-20 minutes, or until the mushrooms are tender and the filling is golden brown.

6. 6. Allow the Stuffed Mushroom Eyeballs to cool slightly before serving. These spooky treats are best enjoyed warm or at room temperature.

Notes

Choose mushrooms that are large and uniform in size for the best presentation.

Make sure the cream cheese is softened to room temperature for a smooth, creamy filling.

Experiment with different herbs and spices to customize the flavor, such as paprika, chili powder, or dried thyme.

Adjust the baking time based on the size of your mushrooms and the accuracy of your oven temperature.
