  • 8 ounce cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 1/2 cup fresh strawberries, diced
  • 3 tablespoon strawberry preserves

Instructions

1. In a medium bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in the whipped cream.

2. Place the sponge cake sheet on a clean surface. Spread the cream cheese mixture evenly over the cake, leaving a 1-inch border. Sprinkle diced strawberries over the cream mixture and drizzle with strawberry preserves.

3. Starting from the long side with the filling, carefully roll the cake into a tight log. Use parchment paper to help guide and tighten the roll. Wrap in plastic wrap and refrigerate for at least 1 hour.

4. After chilling, remove the plastic wrap and slice into 1-inch pieces. Optionally, drizzle with melted white chocolate, add extra whipped cream, or garnish with mint leaves.
