Spicy Peanut Butter Noodles are a delightful and versatile dish that have captured the hearts of home cooks around the world. This Asian-inspired recipe combines the creamy richness of peanut butter with the kick of sriracha, creating a flavor explosion that’s both comforting and craveable.

  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • 2/3 cup creamy peanut butter, ideally low-salt
  • 3 tablespoon low-sodium soy sauce or tamari
  • 1/4 cup water or chicken/veggie broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 2 tablespoon sriracha
  • 1 tablespoon maple syrup or honey
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoon chili-garlic sauce (optional)
  • 1/2 teaspoon ground ginger (optional)

Instructions

1. 1. Cook the brown-rice noodles according to the package instructions. Drain and set aside.

2. 2. In a pan, sauté the minced garlic in oil over medium heat until fragrant.

3. 3. In a bowl, whisk together the peanut butter, soy sauce, water or broth, rice vinegar, sesame oil, sriracha, maple syrup, and red pepper flakes. (Optional: also add chili-garlic sauce and/or ground ginger.)

4. 4. Add the cooked noodles to the pan with the sautéed garlic. Pour the sauce over the noodles and toss everything together to coat evenly.

5. 5. Serve the Spicy Peanut Butter Noodles warm, garnished with additional red pepper flakes or chopped green onions, if desired.

Notes

To make this dish gluten-free, simply use tamari instead of regular soy sauce. For a vegan version, swap the honey for maple syrup and use vegetable broth instead of chicken broth.
