  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon ground black pepper
  • 1/2 cup shredded cheddar cheese or Monterey Jack (dairy-free cheese for vegan)
  • 1/4 cup sour cream or dairy-free alternative
  • 2 tablespoon chopped fresh cilantro
  • 2 tablespoon olive oil

Instructions

1. 1. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 8-10 minutes, or until they are tender.

2. 2. Add the diced red bell pepper, red onion, and chopped green chiles to the skillet. Cook for an additional 5 minutes, or until the vegetables are softened.

3. 3. In a bowl, whisk together the eggs, milk, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and pepper.
