  • 4 tablespoon all-purpose flour

  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, plus more to taste
  • 1/4 teaspoon nutmeg
  • 1 cup grated Gruyere cheese, divided
  • 1 cup grated sharp cheddar cheese, divided
  • 1/2 cup grated Parmesan cheese, divided
  • 1/4 cup panko breadcrumbs
  • 2 tablespoon chopped fresh parsley, for garnish (optional)

Instructions

1. 1. Preheat your oven to 375°F. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Place the cut-side down on a baking sheet and roast for 35-40 minutes, until the squash is tender.

2. 2. In a large saucepan over medium heat, melt 2 tablespoon of butter. Add the chopped onion and garlic and sauté until soft and fragrant. Stir in the flour and cook for 1-2 minutes.

3. 3. Gradually whisk in the milk, salt, pepper, and nutmeg. Cook, stirring frequently, until the sauce thickens.

4. 4. Remove the saucepan from heat and stir in half of each type of cheese (Gruyere, cheddar, and Parmesan) until smooth and creamy.

5. 5. Scrape the roasted spaghetti squash strands into a greased baking dish. Pour the cheese sauce over the squash and gently mix to combine. Sprinkle the remaining cheese and panko breadcrumbs evenly on top. Dot the top with the remaining 2 tablespoon of butter.
