Smashed Carrots are a simple yet delicious side dish that transforms ordinary carrots into a crispy, flavorful treat.

  • 2 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

1. Preheat your oven to 400°F.

2. Place the carrot rounds in a pot of boiling water and cook for 8–10 minutes, until tender but not falling apart. Drain and let cool slightly.

3. Use the bottom of a glass or a fork to gently smash each carrot round to flatten slightly.

4. Place the smashed carrots on a baking sheet. Drizzle with olive oil, sprinkle with garlic powder, smoked paprika, salt, and black pepper. Toss gently to coat.

5. Roast in the oven for 15–20 minutes, until the edges start to brown and become crispy.

6. Sprinkle the grated Parmesan over the carrots during the last 5 minutes of baking.

7. Remove from the oven, garnish with chopped fresh parsley, and serve warm.

Notes

Select carrots that are uniform in size for even cooking.

Don’t overcrowd the baking sheet to allow for proper crisping.
