  • 34 pound chuck roast, trimmed of excess fat
  • 1/2 cup soy sauce (low sodium preferred)
  • 1/4 cup brown sugar, packed
  • 1/4 cup honey
  • 2 tablespoon sesame oil
  • 2 tablespoon rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 medium onion, thinly sliced
  • 4 green onions, thinly sliced, for garnish
  • Sesame seeds, for garnish
  • Cooked rice, for serving
  • Optional: Kimchi, for serving

Instructions

1. Prepare the Sauce: In a bowl, whisk together the soy sauce, brown sugar, honey, sesame oil, rice vinegar, ginger, garlic, red pepper flakes, and black pepper.

2. Add to the Slow Cooker: Place the chuck roast in the slow cooker and pour the sauce over the top. Add the sliced onion on top.

3. Cook Low and Slow: Cover and cook on LOW for 8–10 hours or on HIGH for 4–5 hours, until the beef is tender and easily shreds.

4. Shred the Beef: Remove the roast from the slow cooker and use two forks to shred the meat. Return the shredded beef to the slow cooker and mix it with the sauce.

5. Serve and Enjoy: Spoon the Slow Cooker Korean Beef over cooked rice and garnish with sliced green onions and sesame seeds. Serve with kimchi, if desired.
