Sheet Pan Sausage and Veggies is the ultimate one-pan wonder – it’s easy to prepare, bursting with flavor, and packed with nutritious ingredients.

  • 1 pound Italian sausage
  • 2 cup bell peppers, sliced
  • 1 cup red onion, sliced
  • 2 cup broccoli florets
  • 1 cup zucchini, sliced
  • 1 pound baby potatoes, halved
  • 3 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (optional)

Instructions

1. 1. Preheat your oven to 400°F. Line a large baking sheet with parchment paper or lightly grease it.

2. 2. In a large bowl, combine the sliced bell peppers, red onion, broccoli florets, zucchini, and halved baby potatoes. Drizzle with olive oil and sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.

3. 3. Arrange the Italian sausages on the prepared baking sheet among the seasoned vegetables.

4. 4. Roast for 25-30 minutes, turning the vegetables halfway through, until sausages are cooked through and vegetables are tender and slightly caramelized.

5. 5. Optionally sprinkle with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This dish can also be assembled ahead of time for meal prep.
