Ingredients

Scale
  • 1 box yellow cake mix
  • 1 large egg
  • 1/2 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 8 ounce cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 4 cup powdered sugar
  • 8 ounce cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 2 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F. Grease a 9×13-inch baking pan or line it with parchment paper.

2. In a large bowl, combine the yellow cake mix, egg, melted butter, pumpkin puree, and vanilla extract. Mix until the batter is smooth and pour it into the prepared pan.

3. In a separate bowl, beat the cream cheese until it’s smooth. Add the eggs, vanilla, pumpkin puree, melted butter, cinnamon, nutmeg, cloves, and powdered sugar. Mix until everything is well combined.

4. Evenly pour the pumpkin spice gooey filling over the cake base.

5. Bake the cake for 35–45 minutes, or until a toothpick inserted in the center comes out mostly clean. The filling will remain gooey.

6. In a bowl, beat the cream cheese and butter together until smooth. Add the brown sugar, powdered sugar, and vanilla extract. Beat the mixture until it’s creamy and well combined.

7. Once the cake has cooled, spread the brown sugar cream cheese frosting evenly over the top.

8. Slice and enjoy this decadent Pumpkin Spice Gooey Cake!

Notes

Use room-temperature ingredients for a smoother batter and frosting.

Be careful not to overmix the batter to avoid a dense cake.

Check for doneness by inserting a toothpick; it should come out mostly clean with a few moist crumbs.

Feel free to adjust spice levels to your liking.

Consider adding a dusting of cinnamon or chopped nuts for decoration.
