By combining the creamy richness of cottage cheese with the natural sweetness of pumpkin purée, these muffins offer a unique texture and flavor profile that sets them apart from traditional pumpkin muffins.

Ingredients

Scale
  • 1 cup pumpkin purée
  • ½ cup cottage cheese
  • 2 large eggs
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 ¼ cup whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon pumpkin spice
  • ¼ cup melted coconut oil

Instructions

3. In a medium bowl, combine the flour, baking soda, baking powder, salt, cinnamon, and pumpkin spice. Mix well.

7. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
