Peanut butter and jelly is a classic flavor combination that evokes nostalgic memories of childhood lunches. This recipe combines the creamy richness of peanut butter, the sweetness of ripe bananas, and the fruity tartness of your favorite jelly or jam for a truly decadent treat.

Ingredients

Scale
  • 3 ripe bananas
  • 1 cup creamy peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly or jam

Instructions

1. Preheat your oven to 350°F and grease a loaf pan.

2. Mash the ripe bananas until smooth. Add the peanut butter, sugars, melted butter, vanilla extract, and egg. Mix until well combined.

3. In a separate bowl, whisk together the flour, baking soda, and salt.

4. Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.

5. Pour half of the batter into the prepared loaf pan. Spoon the jelly or jam over the top and use a knife to swirl it through the batter.

6. Top with the remaining batter and use a knife to lightly swirl the jelly or jam through the top layer as well.

7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

8. Allow the Peanut Butter & Jelly Banana Bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor and sweetness. The browner the bananas, the better.

Don’t overmix the batter, as this can result in a tough, dense texture.

Swirl the jelly or jam through the batter gently, being careful not to overmix it.

Keep a close eye on the bread as it bakes, as oven temperatures can vary. The bread is done when a toothpick inserted in the center comes out clean.

Allow the bread to cool completely before slicing for the best texture.
