Peanut Butter Brownie Bars are the ultimate indulgence for anyone with a sweet tooth. Imagine a rich, fudgy brownie base layered with a creamy peanut butter filling and topped with a crunchy chocolate topping – it’s a flavor explosion in every bite!

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 egg yolk
  • 1/2 cup cocoa powder, sifted
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 1 cup smooth peanut butter, at room temperature
  • 1/2 cup powdered sugar
  • 1 cup dark chocolate, chopped
  • 1/2 cup Rice Krispies
  • 1 teaspoon vegetable oil

Instructions

1. Preheat the oven to 350°F and line a baking pan with parchment paper.

2. Make the Brownie Base: In a large bowl, mix together the melted butter, sugar, and vanilla extract. Beat in the eggs and egg yolk until well combined. Gently fold in the cocoa powder, flour, and salt until just incorporated. Spread the batter evenly into the prepared baking pan and bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean. Allow the brownies to cool slightly.

3. Make the Peanut Butter Layer: In a medium bowl, beat the softened butter, peanut butter, and powdered sugar together until smooth and creamy. Spread the peanut butter mixture evenly over the cooled brownie base.

4. Make the Chocolate Crunch Topping: In a small saucepan or microwave-safe bowl, melt the dark chocolate with the oil (if using). Stir in the Rice Krispies until well combined. Spread the chocolate crunch mixture over the peanut butter layer.

5. Chill and Serve: Refrigerate the Peanut Butter Brownie Bars for at least 2 hours, or until the chocolate topping is set. Once chilled, cut the bars into squares and enjoy!

Notes

Use high-quality dark chocolate for the crunch topping to get the best flavor and texture.

Make sure all your ingredients, especially the peanut butter and butter, are at room temperature for easier mixing and a smoother consistency.

For nut-free Peanut Butter Brownie Bars, you can substitute the peanut butter with sun butter or another nut-free butter.
