Ingredients

Scale
  • 1 pound boneless skinless chicken breast
  • 1/4 cup light soy sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1/2 cup water
  • 1/4 cup light soy sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 8 ounce mushrooms, sliced
  • 1 medium zucchini, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon vegetable oil

Instructions

1. 1. Slice the chicken into thin, bite-sized pieces and marinate in light soy sauce, rice vinegar, sesame oil, and cornstarch for 10-15 minutes.

2. 2. In a separate bowl, whisk together water, light soy sauce, oyster sauce, rice vinegar, brown sugar, and cornstarch to create the savory sauce.

3. 3. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 5-6 minutes until browned and cooked through. Remove and set aside.

4. 4. Add the remaining tablespoon of vegetable oil to the skillet. Stir-fry the mushrooms, zucchini, garlic, and ginger for 3-4 minutes until tender-crisp.

5. 5. Return the chicken to the skillet, pour in the savory sauce, and cook for 2-3 minutes until the sauce thickens and coats everything evenly.

6. 6. Serve hot over steamed rice or noodles, garnished with chopped green onions or sesame seeds if desired.

Notes

For best results, use a combination of mushroom varieties such as button, cremini, and shiitake.

Adjust the sauce ingredients to taste for a perfect savory-sweet balance.
