Ingredients

Scale
  • 2 eggs
  • 1 cup almond flour
  • 1/4 cup organic pumpkin
  • 3 tablespoon maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 tablespoon coconut butter
  • 1/2 tablespoon maple syrup
  • 1/2 tablespoon unsweetened almond milk

Instructions

1. Preheat your oven to 350°F. Grease a donut pan or line it with silicone molds.

2. In a large bowl, whisk together the eggs, pumpkin, maple syrup, and vanilla extract until well combined. In a separate bowl, combine the almond flour, baking powder, cinnamon, and pumpkin pie spice. Gradually mix the dry ingredients into the wet ingredients, stirring until you have a smooth batter.

3. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.

4. Bake the donuts for 15-18 minutes, or until a toothpick inserted into the center comes out clean.

5. Allow the donuts to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

6. In a small bowl, mix the coconut butter, maple syrup, and almond milk until you achieve a smooth, pourable consistency.

7. Drizzle or spread the icing over the cooled Paleo Pumpkin Donuts, and serve immediately.

Notes

Choose the right almond flour: Look for a finely ground, blanched almond flour for a smooth, consistent texture in your donuts.

Use fresh pumpkin puree: While canned pumpkin can work, using fresh pumpkin puree will enhance the flavor and nutritional content of your donuts.

Adjust sweetness to taste: The amount of maple syrup can be adjusted to your personal preference, depending on how sweet you like your donuts.

Get creative with toppings: In addition to the icing, you can experiment with other Paleo-friendly toppings, such as chopped nuts, shredded coconut, or a dusting of cinnamon.

Bake for the right texture: Be careful not to overbake the donuts, as this can result in a dry, crumbly texture. Keep an eye on them and remove them from the oven as soon as a toothpick inserted in the center comes out clean.
