  • 1/4 cup shredded coconut (optional)

Instructions

1. Preheat your oven to 350°F.

2. In a bowl, mix the flour, sugar, and salt. Cut in the softened butter and add the vanilla extract until the mixture forms crumbs. Press this mixture firmly into a lined baking pan.

3. Bake the crust for 15–20 minutes, or until lightly golden. Remove from the oven and let cool slightly.

4. In a separate bowl, whisk together the mango puree, eggs, sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt until smooth.

5. Pour the creamy mango filling over the baked crust, spreading it evenly. Sprinkle coconut topping if using.

6. Bake for 25–30 minutes, or until the filling is set. Allow to cool completely before cutting and serving.

Notes

For best results, use ripe mangoes for puree. Adjust sugar based on mango sweetness. Store in an airtight container for up to 5 days.
