  • 2 cup heavy cream
  • 1/2 cup powdered sugar
  • 16 ounce crushed fresh pineapple

Instructions

1. Preheat your oven to 350°F. Grease and flour a 9×13-inch baking pan.

2. In a large bowl, beat the butter and sugar together until light and fluffy, about 2-3 minutes.

3. Beat in the egg yolks, crushed mandarin oranges, and vanilla extract until smooth.

4. In a separate bowl, whisk together the cake flour, baking powder, and salt. Gradually add this to the wet ingredients, alternating with the milk, mixing just until combined.

5. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick comes out clean. Allow to cool completely before frosting.

6. In a large bowl, whip the heavy cream with the powdered sugar until stiff peaks form. Fold in the crushed pineapple and optional vanilla pudding mix if using.
