Ingredients

Scale
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 4 large egg yolks
  • 3/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 teaspoon finely grated lemon zest
  • Powdered sugar, for dusting

Instructions

1. Make the Lemon Curd: In a heatproof bowl, whisk together the egg yolks, sugar, salt, lemon juice, and zest. Place the bowl over a simmering water bath and cook, whisking constantly, until the mixture has thickened. Remove from the heat and stir in the cold butter until smooth. Allow the lemon curd to cool completely before using.

2. Prepare the Cookie Dough: In a bowl, whisk together the flour, baking powder, and salt. In a separate bowl, beat the butter and sugar until light and fluffy. Add the egg yolk, vanilla, and lemon zest, and mix until well combined. Gradually add the flour mixture, mixing until the dough comes together.

3. Shape and Bake the Cookies: Preheat your oven to 350°F. Roll the dough into balls and place them on baking sheets lined with parchment paper. Using your thumb or the back of a spoon, make an indentation in the center of each ball. Spoon the prepared lemon curd into the indentation. Bake the cookies for 12–15 minutes, or until the edges are lightly golden. Allow the cookies to cool on a wire rack, then dust them with powdered sugar before serving.

Notes

To ensure your Lemon Curd Cookies turn out perfectly every time, here are a few helpful tips:

Achieve the Best Lemon Curd Consistency: Be sure to whisk the lemon curd mixture constantly over the simmering water bath to prevent the eggs from scrambling. The curd should thicken to a smooth, velvety consistency.

Importance of Room Temperature Ingredients: For the fluffiest cookie dough, make sure your butter and egg yolk are at room temperature before starting. This will help the ingredients incorporate more easily.

Baking Time and Texture: Keep a close eye on the cookies during baking, as the lemon curd can cause them to bake a bit faster. Look for lightly golden edges and a soft, tender center.
