  • 2 green onions
  • 1 tablespoon soy sauce for soup
  • 1 yellow onion
  • 1/2 medium radish, quartered
  • 2 tablespoon chopped garlic
  • 1 1/2 pound beef short ribs
  • 2 slices ginger
  • 1 1/2 teaspoon sea salt
  • 3 to 4 green onion roots

Instructions

1. Rinse the beef short ribs under cold water to remove impurities. Wash and roughly chop the green onions and radish.

2. In a large pot, combine the water, beef short ribs, green onions, yellow onion, radish, garlic, and ginger slices. Bring to a boil over high heat, then reduce to medium-low and simmer for 1.5 to 2 hours.

3. Skim any foam or impurities that rise to the surface during simmering.

4. Add soy sauce and sea salt, then let flavors meld for another 10-15 minutes. Taste and adjust seasoning as needed.

5. Ladle soup into bowls and garnish with sliced green onions or desired toppings.

Notes
