Deliciously Spicy Korean Chicken Burgers: A Flavor Explosion on a Brioche Bun

Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon gochugaru (Korean chili flakes)
  • 2 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoon rice vinegar
  • 4 brioche buns
  • 2 cup shredded cabbage
  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

1. 1. Combine the chicken thighs with gochujang, gochugaru, soy sauce, honey, sesame oil, garlic, ginger, and rice vinegar in a large bowl. Cover and marinate for at least 30 minutes or up to 2 hours.

2. 2. Heat a large skillet over medium heat and add the marinated chicken. Cook until fully cooked through and slightly caramelized, about 8-10 minutes, stirring occasionally.

3. 3. In a separate bowl, mix the shredded cabbage, mayonnaise, sriracha, honey, and rice vinegar. Toss until evenly coated.

4. 4. Toast the brioche buns and place the cooked chicken on the bottom buns. Top with slaw, sprinkle with sesame seeds, and garnish with sliced green onions. Serve immediately.

Notes

For juiciness, use boneless, skinless chicken thighs. Adjust gochujang and gochugaru to taste for spice level. Consider pairing with crispy fries or pickled vegetables.
