2 cup shredded cheddar cheese

2 cup shredded mozzarella cheese

1 cup bell peppers, sliced

1/2 cup onion, diced

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

4 low-carb tortillas

1 tablespoon olive oil

1/2 cup sour cream (optional)

Instructions

1. 1. Season the chicken breasts with cumin, paprika, garlic powder, salt, and pepper. Cook the chicken in a skillet over medium heat until fully cooked through. Once cooked, slice the chicken into strips.

2. 2. In the same skillet, sauté the bell peppers and onion until they’re softened and fragrant.

3. 3. Lay a low-carb tortilla on a flat surface and layer half of the shredded cheddar and mozzarella cheeses, followed by the cooked chicken strips, sautéed vegetables, and the remaining cheese. Top with another tortilla.
