Juicy Garlic Parmesan Chicken Meatloaf: A Comforting and Flavorful Twist on a Classic

  • 1 cup Parmesan cheese, shredded
  • 1 cup Panko breadcrumbs
  • 2 large eggs
  • 4 cloves minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup whole milk
  • 2 tablespoon unsalted butter
  • 1/4 cup additional Parmesan for sprinkling
  • 2 tablespoon fresh parsley for garnish

Instructions

1. 1. Preheat your oven to 375°F. Line a loaf pan with parchment paper or lightly grease it.

2. 2. In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, pepper, and milk. Mix until well combined, but be careful not to overwork the mixture.

3. 3. Transfer the mixture to the prepared loaf pan and shape it into a loaf.

4. 4. Melt the butter and brush it over the top of the meatloaf. Sprinkle the additional Parmesan cheese over the top.

5. 5. Bake the meatloaf for 45–55 minutes, or until the internal temperature reaches 165°F and the top is golden brown.

6. 6. Once the meatloaf is out of the oven, let it rest for 10 minutes before slicing. Garnish with fresh parsley and serve.
