Honey Lime Chicken and Avocado Rice Stack 30 Minutes Easy Delicious

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup honey
  • 2 tablespoon lime juice
  • 1 teaspoon lime zest
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup cooked white or brown rice
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice
  • Salt to taste
  • 2 ripe avocados, sliced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

1. In a bowl, whisk together the honey, lime juice, lime zest, garlic, salt, and pepper. Add the chicken breasts and marinate for at least 30 minutes (or up to 2 hours).

2. Heat a skillet over medium heat. Cook the chicken for 5–7 minutes per side, or until fully cooked and golden brown. Remove from heat and let it rest before slicing.

3. In a bowl, toss the cooked rice with the chopped cilantro, lime juice, and a pinch of salt.

4. In another bowl, gently toss the avocado slices with the lime juice, salt, and pepper.

5. On a plate, layer the cilantro lime rice at the bottom, then add the sliced avocado on top. Finally, place the sliced honey lime chicken over the avocado.

Notes

Garnish with extra lime zest or cilantro if desired. Serve warm for best flavor.
