Ingredients

Scale
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 tablespoon fresh basil, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon crushed red pepper flakes (optional)

Instructions

1. 1. Preheat your oven to 375°F. Lightly grease a baking dish.

2. 2. In a bowl, mix the ricotta cheese, Parmesan cheese, chopped spinach, basil, parsley, garlic powder, salt, and pepper until well combined.

3. 3. Place each chicken breast between two sheets of plastic wrap and pound them to an even thickness.

4. 4. Spread the ricotta mixture evenly over each chicken breast. Roll up the chicken tightly and secure with toothpicks or kitchen twine.

5. 5. Heat the olive oil in a skillet over medium-high heat. Sear the chicken rolls on all sides until golden brown, about 2–3 minutes per side.

6. 6. Transfer the chicken rolls to the prepared baking dish, pour the marinara sauce over them, and sprinkle with the crushed red pepper flakes (if using). Bake for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F).

7. 7. Remove the toothpicks or twine, slice the chicken rolls if desired, and serve hot with the savory marinara sauce.

Notes

Choose boneless, skinless chicken breasts that are of even thickness for easy pounding and rolling.

Feel free to experiment with the filling by adding extra herbs or substituting the ricotta with another soft cheese like goat or feta.

Be careful not to overbake the chicken rolls to prevent dryness.

Allow the chicken rolls to rest for a few minutes before slicing for better flavor and moisture.
