  • 1 cup sliced mushrooms
  • 2 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon thyme
  • 1 cup whole wheat breadcrumbs

Instructions

1. 1. Trim the ends off the green beans and cut them into 1-inch pieces. Blanch in salted boiling water for 2-3 minutes, then drain and rinse with cold water.

2. 2. In a skillet, sauté mushrooms, garlic, and onion in olive oil until tender. Stir in flour and cook for 1 minute.

3. 3. Gradually whisk in heavy cream and milk until the sauce thickens. Season with salt, pepper, garlic powder, and thyme.

4. 4. Preheat oven to 350°F. In a baking dish, layer green beans and pour mushroom sauce over them. Top with breadcrumbs.

5. 5. Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 10-15 minutes until topping is golden brown.

Notes
