  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt

Instructions

1. 1. Preheat your oven to 350°F. Grease and flour a standard loaf pan.

2. 2. In a small bowl, combine the soy milk and apple cider vinegar. Let sit for 5 minutes. In another bowl, whisk together the ground flaxseeds, molasses, melted vegan butter, brown sugar, orange zest, and vanilla extract until smooth.

3. 3. In a large bowl, whisk together the all-purpose flour, baking soda, baking powder, ground ginger, cinnamon, cloves, and salt.

4. 4. Pour the wet mixture into the dry ingredients and stir until combined. Add the soy milk-vinegar mixture and mix until a smooth batter forms.

5. 5. Transfer the batter to the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean. Allow to cool completely before frosting or slicing.
