Instructions

1. Preheat your oven to 350°F. Line two baking sheets with parchment paper.

2. Mix together the flour, baking soda, salt, ginger, cinnamon, clove, and espresso powder in a medium bowl. Set aside.

3. In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until light and fluffy.

4. Mix in the egg, vanilla extract, and molasses until well combined.

5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.

6. Scoop the dough into 1-inch balls and roll each ball in granulated sugar. Place on prepared baking sheets, spacing about 2 inches apart.
