  • 2 pie crusts
  • 1 cup shredded Mexican cheese
  • 1 egg for brushing
  • Salsa for dipping

Instructions

1. 1. Preheat your oven to 375°F and line a baking sheet with parchment paper.

2. 2. In a skillet over medium heat, cook the ground meat until it’s fully browned. Drain any excess fat, then stir in the taco seasoning, shredded carrots, and chopped bell peppers or baby spinach (if using). Cook for an additional 2-3 minutes, or until the vegetables are tender. Remove the filling from the heat.

3. 3. Roll out the pie crusts and cut each into 4-6 squares, depending on the desired size of the hand pies. Spoon a small amount of the taco filling onto the center of each square, then sprinkle with shredded Mexican cheese.
