  • 4 large eggs
  • 2/3 cup sugar
  • 1 3/4 tablespoon butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/3 cup hot water
  • 3 tablespoon sugar
  • 2 1/2 cup heavy whipping cream
  • 1 1/3 cup powdered sugar
  • 12 ounce mascarpone cheese
  • 1/2 teaspoon vanilla extract
  • 2 1/2 cup fresh berries

Instructions

1. Preheat your oven to 350°F (175°C) and grease and line your cake pans.

2. In a mixing bowl, beat the eggs and sugar with a hand mixer until pale and fluffy. Gently fold in the sifted cake flour and salt, then fold in the melted butter and vanilla extract until well combined.

3. Pour the cake batter into prepared pans and bake for 20–25 minutes, or until a toothpick comes out clean. Allow to cool on a wire rack.

4. While the cake cools, make the cake syrup by combining hot water and sugar in a small saucepan. Stir until dissolved, then let cool.

5. Using a stand mixer or hand mixer, beat the cold heavy cream and powdered sugar until soft peaks form. Gently fold in the cold mascarpone cheese and vanilla extract until smooth.

6. Layer the cooled cake, brushing each layer with cake syrup. Spread Mascarpone Chantilly Cream between layers and arrange fresh berries as filling.

7. Frost the outside of the cake with remaining Mascarpone Chantilly Cream and top with remaining fresh berries.

8. Refrigerate for at least 1 hour before serving.

Notes

Store the assembled cake in the refrigerator for up to 3 days. Avoid leaving at room temperature for extended periods.
