Indulge in Enchiladas Suizas: A Creamy and Flavorful Delight!

Enchiladas Suizas 4 Servings Easy Delicious

Enchiladas Suizas, or “Swiss Enchiladas,” are a beloved Mexican dish that offers a delightful twist on traditional enchiladas. These enchiladas feature a creamy, cheesy sauce that sets them apart from their spicier counterparts. Originating in Mexico City, Enchiladas Suizas combine the rich flavors of sour cream, green enchilada sauce, and melted cheese to create a truly indulgent and satisfying meal.

Ingredients

Scale
  • 8 corn tortillas
  • 2 cup cooked and shredded chicken
  • 1 cup sour cream
  • 1 cup green enchilada sauce
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

1. 1. Preheat your oven to 375°F.

2. 2. In a mixing bowl, combine the sour cream, green enchilada sauce, chicken broth, chopped onion, minced garlic, and a pinch of salt and pepper. Stir until the ingredients are well-incorporated and the sauce has a smooth, creamy consistency.

3. 3. Heat the olive oil in a skillet over medium heat. Lightly fry the corn tortillas for 10-15 seconds per side, just until they become pliable and softened. Drain the tortillas on paper towels to remove any excess oil.

4. 4. Spoon the shredded chicken onto each softened tortilla, then roll them up tightly and place them seam-side down in a baking dish.

5. 5. Evenly pour the prepared sauce over the rolled enchiladas, making sure to coat them all. Finally, sprinkle the shredded cheese on top.

6. 6. Pop the baking dish into the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

7. 7. Remove the enchiladas from the oven and garnish with fresh chopped cilantro. Serve hot.
