Dump-and-Bake Chicken Tzatziki with Rice is an easy-to-prepare casserole combining Greek-inspired chicken with a tzatziki-inspired sauce, all baked with fluffy white rice.

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cup long-grain white rice
  • 2 cup chicken broth or water
  • 1 cup Greek yogurt
  • 1/2 cup grated cucumber, excess water squeezed out
  • 2 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon fresh lemon juice
  • 4 ounce crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley or cilantro (optional)

Instructions

1. 1. Preheat your oven to 375°F.

2. 2. In a 9×13-inch baking dish, combine the uncooked rice, chicken broth (or water), Greek yogurt, grated cucumber, olive oil, garlic, dill, oregano, cumin, salt, pepper, and lemon juice. Stir well until evenly mixed.

3. 3. Stir in the chicken pieces until they are coated and evenly distributed throughout the dish.

4. 4. Cover the baking dish tightly with foil and bake for 45–50 minutes, or until the rice is tender and the chicken is cooked through.

Notes

For a lower-calorie version, use brown rice or cauliflower rice.
