Creepy Eyeball Pasta Salad: A Spooktacular Halloween Treat

  • 4.5 ounce mini mozzarella balls
  • 1 sliced black olive
  • 1 cup cherry tomatoes, sliced in half
  • 1 cucumber, diced
  • 1 red bell pepper, diced

  • 1.75 ounce black olives, sliced
  • 1.75 ounce green olives, sliced
  • 1/4 cup fresh basil, chopped
  • 3 tablespoon olive oil
  • 2 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Pepper to taste

Instructions

1. 1. Cook the pasta according to the package directions until al dente. Drain, rinse with cold water, and set aside.

2. 2. Cut the mozzarella balls in half. Place a slice of black olive on top of each half to create the “eyeball” look. Set these aside.

3. 3. In a large bowl, combine the sliced cherry tomatoes, diced cucumber, diced red and yellow bell peppers, sliced black olives, sliced green olives, and chopped fresh basil.

4. 4. Gently stir the cooked pasta into the vegetable mixture.

5. 5. In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
