Ingredients

Scale
  • 5 pound Yukon gold potatoes
  • 2 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated (plus extra for topping)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions

1. 1. Preheat your oven to 375°F. Grease a large baking dish with butter.

2. 2. In a saucepan over medium heat, melt butter and sauté garlic for 1 minute. Stir in flour and cook for another minute. Gradually whisk in cream until smooth. Add Parmesan cheese, thyme, salt, and pepper. Cook until slightly thickened, about 3–5 minutes.

3. 3. Arrange a layer of potato slices in the prepared baking dish. Pour a portion of the cream mixture over the potatoes. Repeat layers until all potatoes and sauce are used, finishing with sauce on top. Sprinkle extra Parmesan on top.

4. 4. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20–25 minutes, until potatoes are tender and the top is golden brown.

5. 5. Let the scalloped potatoes cool for a few minutes before serving.

Notes

Slice the potatoes evenly for even cooking.
