  • 2 bulbs garlic
  • 1/2 onion, diced
  • 1 tablespoon extra-virgin olive oil
  • 1 1/2 cup organic heavy cream
  • 2 cup organic vegetable broth
  • 4 tablespoon organic tomato paste
  • 1 teaspoon sea salt, plus more as needed
  • 1 teaspoon all-purpose seasoning blend
  • 1/2 teaspoon smoked paprika

Instructions

1. Preheat your oven to 400°F.

2. Place the tomato wedges and whole garlic bulbs on a baking sheet. Drizzle with olive oil and season with salt. Roast for 25–30 minutes, until the tomatoes are soft and slightly caramelized.

3. While the tomatoes and garlic are roasting, heat a large pot over medium heat. Add the diced onion and sauté until translucent.

4. Once the tomatoes and garlic are roasted, squeeze the garlic cloves from their skins into a blender. Add the roasted tomatoes (reserve a few for garnish if desired) and blend until smooth.

5. Pour the blended tomato mixture into the pot with the sautéed onions. Stir in the tomato paste, vegetable broth, seasoning blend, and smoked paprika. Simmer for 10–15 minutes.

6. Reduce the heat and stir in the heavy cream. Adjust the salt to taste. Heat the soup gently, being careful not to let it boil.
