  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

  • 2 medium carrots, peeled and cut into 1-inch pieces
  • 2 parsnips, peeled and cut into 1-inch pieces
  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 1 medium red onion, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon dried rosemary

Instructions

1. Preheat your oven to 400°F.

2. In a bowl, whisk together the Dijon mustard, heavy cream, olive oil, honey, garlic powder, onion powder, thyme, and paprika. Season with salt and pepper to taste.

3. Coat the chicken thighs with the creamy Dijon mixture, ensuring they are evenly coated. Arrange the prepared vegetables in a baking dish and toss them with olive oil, rosemary, salt, and pepper.

4. Place the coated chicken thighs on top of the vegetables in the baking dish.
