  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

1. Preheat your oven to 350°F and line an 8×8-inch baking pan with parchment paper or lightly grease it.

2. In a blender or food processor, combine the cottage cheese, eggs, maple syrup (or honey), and vanilla extract. Blend until smooth and creamy.

3. Add the almond flour, baking powder, cinnamon, and salt to the blended wet ingredients. Mix until just combined.
