  • 3 large eggs
  • 1/4 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded

  • 1/4 teaspoon black pepper
  • 1/2 cup sun-dried tomatoes in oil, drained
  • 4 slices prosciutto
  • 1 teaspoon fresh rosemary, chopped

Instructions

1. Preheat oven to 375°F.

2. Prepare ramekins: Grease 4 ramekins or a 9-inch pie dish.

3. Cut puff pastry: Roll out the puff pastry and cut it to fit the ramekins or pie dish.

4. Mix eggs & cream: In a bowl, whisk together the eggs, heavy cream, Parmesan, mozzarella, salt, and pepper.

5. Add flavorings: Stir in the sun-dried tomatoes, prosciutto, and rosemary.

6. Assemble: Place the puff pastry in the ramekins or dish, then pour the egg mixture over the pastry.

7. Bake: Bake for 25–30 minutes until the soufflés are puffed and golden.

8. Serve: Let the soufflés cool slightly before serving.

Notes

Using eggs at room temperature helps them whip up to a fluffier consistency.

When adding the egg mixture to the puff pastry, gently fold it in to maintain the airy texture.

Keep a close eye on the soufflés during baking, as they can easily over-puff and collapse if left in the oven too long.

To reheat any leftover soufflés, simply place them in a preheated 350°F oven for 5-10 minutes until warmed through.
