  • 1 cup shredded carrots

  • 1/2 cup Greek yogurt
  • 1/2 cup ranch dressing
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 4 whole wheat or gluten-free pita pockets

Instructions

1. 1. In a small bowl, whisk together the olive oil, garlic powder, smoked paprika, cumin, lemon juice, salt, and pepper. Rub this mixture all over the chicken breasts.

2. 2. Cook the chicken over medium heat for 6-8 minutes per side or until the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing into thin strips.
