  • 4 cup chicken broth
  • 1 pound chicken, cut into 1-inch chunks
  • 1/4 cup sun-dried tomatoes, julienne cut
  • 2 cup pasta
  • 1 cup half-and-half
  • 2 tablespoon cornstarch
  • 1 cup spinach
  • 1/4 teaspoon smoked paprika

Instructions

1. Melt the butter in a large pot over medium heat. Add the onion and cook until softened, about 3-4 minutes.

2. Stir in the garlic, Italian seasoning, salt, pepper, and red chili flakes. Cook for 1 minute, until fragrant.

3. Pour in the chicken broth and bring the mixture to a simmer.

4. Add the chicken and sun-dried tomatoes to the pot. Simmer until the chicken is cooked through, about 8-10 minutes.

5. Stir in the pasta and cook according to package instructions until al dente.

6. In a small bowl, whisk together the half-and-half and cornstarch. Slowly pour the mixture into the soup, stirring constantly, until the soup has thickened slightly.

7. Stir in the spinach and smoked paprika, and cook until the spinach is wilted.

8. Serve the Chicken Lasagna Soup warm, garnished with dollops of ricotta cheese, Parmesan, and mozzarella.
